Little's Granola
Directions
Mix oats, nuts, and coconut in a large bowl, set aside. Whisk oil, sweetener, vanilla and salt in a bowl until combined. Pour wet ingredients into dry and stir until thoroughly incorporated. Spread in a single layer on a silpat or parchment paper on a baking sheet. Bake 20 minutes at 350 degrees. Add chopped chocolate or cherries once cooled. Enjoy this treat every morning with your coffee, some yogurt, or just plain out of whatever container you store it in. Lasts up to 2 weeks but realistically won’t make it more than a day if you’re like us. Also a great snack to bring to a pal.
Ingredients
2 cups oats
1 cup nuts, pecans, walnuts, cashews
1 cup coconut chips
1/3 cup coconut oil or olive oil
1/3 cup honey, maple syrup, or agave
1 tsp. vanilla
1 1/2 tsp. salt
Optional add ins—
1 Tbsp. cocoa powder
1/2 cup pumpkin seeds
1 tsp. cinnamon
Mix ins at the end—
1/2 cup chopped chocolate
1/4 cup dried cherries
